The Ultimate Chicken and Lamb Rice Recipe
Ingredients
- 1 whole chicken
- 1 cup of rice
- 1 pound of lamb
- 1 onion
- 1 cup of beans
- 4 slices of bread
Instructions
1. Preheat the Kamado Joe grill to medium-high heat.
2. Season the chicken with salt and pepper, then place it on the grill.
3. Cook the chicken for about 45 minutes, turning occasionally, until it reaches an internal temperature of 165°F (74°C). Remove from the grill and let it rest for 10 minutes before carving.
4. While the chicken is grilling, cook the rice according to the package instructions. Set aside.
5. In a separate pan, heat some oil and sauté the lamb until browned. Remove from the pan and set aside.
6. In the same pan, sauté the onions until golden brown and caramelized.
7. Add the cooked rice, beans, and lamb to the pan with the caramelized onions. Stir well to combine all the ingredients.
8. Toast the slices of bread and cut them into cubes.
9. Serve the chicken over the rice mixture, with the bread cubes sprinkled on top as a garnish.
