Ingredients:



  • 500g chicken breast, cut into thin strips

  • 2 lemongrass stalks, tough outer layers removed and finely chopped

  • 4 cloves of garlic, minced

  • 2 shallots, finely chopped

  • 1 red chili, seeds removed and finely chopped

  • 1 tablespoon ginger, grated

  • 1 tablespoon fish sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon lime juice

  • 1 tablespoon brown sugar

  • 1/4 cup coconut milk

  • 1 tablespoon vegetable oil

  • Salt and pepper to taste

  • Wooden skewers, soaked in water for 30 minutes



Method of Cooking:



  1. In a bowl, combine lemongrass, garlic, shallots, red chili, ginger, fish sauce, soy sauce, lime juice, brown sugar, coconut milk, vegetable oil, salt, and pepper. Mix well to make a marinade.
