Ingredients


- 4 Chicken Breasts
- 1 cup Brown Rice
- 1 Onion, diced
- 4 Garlic cloves, minced
- 1 cup Cheese, shredded
- 1 Red Bell Pepper, sliced

Instructions


1. Preheat the oven to 375°F (190°C).
2. Cook the brown rice according to the package instructions. Set aside.
3. In a pan, heat some oil over medium heat. Add the diced onion and minced garlic, sauté until fragrant and translucent.
4. Place the chicken breasts on a cutting board and season with salt and pepper on both sides.
5. Make a slit in each chicken breast, creating a pocket for the stuffing.
6. Fill each pocket with a generous amount of shredded cheese and a few slices of red bell pepper.
7. Secure the pockets with toothpicks to prevent the cheese from leaking out.
8. In a baking dish, arrange the stuffed chicken breasts. Sprinkle any remaining cheese over the top.
9. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and golden.
10. Serve the cheesy baked chicken over a bed of cooked brown rice and garnish with additional sliced red bell pepper.
