The Ultimate BBQ Glazed Pork Loin with Cheesy Potatoes



Ingredients


- 2 pounds Pork Loin
- 4 large Carrots
- 2 medium Onions
- 1 cup Barbecue Sauce
- 6 medium Potatoes
- 4 tablespoons Butter
- 1 cup Cheese (shredded)

Instructions


1. Preheat the oven to 375°F (190°C).
2. Trim any excess fat from the pork loin and season it with salt and pepper.
3. Heat a large oven-safe skillet over medium-high heat and sear the pork on all sides until browned, about 3 minutes per side. Remove from the skillet and set aside.
4. In the same skillet, add the carrots and onions. Sauté until slightly softened, about 5 minutes.
5. Place the seared pork loin back in the skillet with the vegetables and pour the barbecue sauce over the top.
6. Transfer the skillet to the preheated oven and roast for 45-50 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Baste the pork with the barbecue sauce every 15 minutes during cooking.
7. While the pork is roasting, peel and slice the potatoes into thin rounds.
8. In a separate skillet, melt the butter over medium heat. Add the sliced potatoes and cook until golden brown and tender, about 10-12 minutes. Season with salt and pepper to taste.
9. Once the pork is cooked, remove it from the oven and let it rest for 10 minutes before slicing.
10. Serve the BBQ glazed pork loin alongside the cheesy potatoes. Garnish with additional barbecue sauce and a sprinkle of shredded cheese.
