Seared NY Strip Steak with Roasted Potatoes and Green Beans

Ingredients

  • 2 NY strip steaks, about 12 oz each

  • 1 lb of potatoes, cut into 1-inch cubes

  • 1 lb of green beans, trimmed

  • 1 large onion, thinly sliced

  • 6 strips of bacon

  • 8 oz turkey breast, thinly sliced

  • 1 cup of salsa

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the potatoes on a baking sheet, add a little oil, salt and pepper. Put them in the oven and roast for about 25 minutes.

  3. While the potatoes are roasting, sauté the bacon in a large skillet until crispy. Remove and set aside, leaving the bacon grease in the skillet.

  4. Add the onions to the skillet and cook until softened and browned. Remove from skillet and set aside.

  5. Next, cook the green beans in the same skillet until they are tender. Remove and set aside.

  6. In the same skillet, add a little oil if needed, and pan-fry the steaks for about 4 minutes on each side, or to your desired doneness. Once done, set the steaks aside to rest.

  7. While the steaks are resting, in the same skillet, add the sliced turkey and sauté until fully cooked.

  8. Return all the previously cooked ingredients (bacon, onions, green beans) back to the skillet and add the salsa. Simmer for a few minutes to heat up all the ingredients.

  9. Once the potatoes are done, remove from the oven and add them to the skillet and gently fold them into the rest of the ingredients.

  10. Serve the steak with the skillet mixture on the side.
