First Time Trying Sichuan? You Won't Believe How This Stir Fry and Lunch Recipe Tastes!



Ingredients


- 1 cup chopped cilantro
- 1 tablespoon sichuan peppercorns
- 2 medium yellow squash, sliced
- 2 ripe tomatoes, diced
- 2 cups cubed watermelon
- 1 pound tripe, cleaned and thinly sliced

Instructions


1. In a large wok or skillet, heat some oil over high heat.
2. Add the sichuan peppercorns and toast for a minute until fragrant. Remove and set aside.
3. In the same pan, add the sliced tripe and stir fry until cooked through and slightly crispy. Remove and set aside.
4. In the same pan, add the yellow squash and tomatoes. Stir fry for 2-3 minutes until slightly softened.
5. Add the toasted sichuan peppercorns back to the pan along with the watermelon cubes. Stir fry for another minute.
6. Finally, add the cilantro and stir fry for a quick 30 seconds before removing from heat.
7. Serve the stir fry immediately as a lunch option or a light meal.
