World Famous Chicken Enchiladas: A Flavorful Fiesta for Your Taste Buds!



Ingredients


- 2 cups of cooked chicken, shredded
- 12 corn tortillas
- 1 cup of red enchilada sauce
- 1 cup of green enchilada sauce
- 1 onion, finely chopped
- 2 jalapenos, seeded and diced
- 2 cups of cheese (Mexican blend or Monterey Jack)

Instructions


1. Preheat your oven to 375°F (190°C).
2. In a large skillet, sauté the onions until they turn translucent.
3. Add the shredded chicken to the skillet and stir until heated through.
4. Warm the corn tortillas in a microwave for 30 seconds or on a stovetop until pliable.
5. Spread a thin layer of red enchilada sauce onto the bottom of a baking dish.
6. Take a tortilla and spoon some chicken mixture into the center. Roll it up tightly and place it seam-side down in the baking dish.
7. Repeat step 6 with the remaining tortillas and chicken mixture.
8. Pour the green enchilada sauce over the rolled tortillas, spreading evenly.
9. Sprinkle the diced jalapenos on top, followed by a generous layer of cheese.
10. Cover the baking dish with aluminum foil and bake for 20 minutes.
11. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbling.
12. Let it cool for a few minutes before serving.
