Ultimate Breakfast Egg and Bacon Grilled Cheese
Ingredients
- 4 large eggs
- 4 slices of bacon
- 4 slices of cheese (cheddar, Swiss, or your preference)
- 4 slices of bread (white, whole-wheat, or sourdough)
- 2 tablespoons of unsalted butter
- Salt and pepper to taste
Instructions
1. Prepare Ingredients
Lightly whisk the eggs in a bowl with a pinch of salt and pepper. Set aside.
2. Cook Bacon
Preheat the flat grill to medium-high. Lay the bacon strips on the grill and cook until crispy, approximately PT8M (about 8 minutes). Use tongs to flip halfway through for even cooking. Once done, remove and let drain on a paper towel.
3. Make Scrambled Eggs
Melt 1 tablespoon of butter on the grill. Pour the whisked eggs onto the grill. Use a spatula to gently stir and fold the eggs, cooking until just set, approximately PT4M (about 4 minutes). Remove from the grill and set aside.
4. Assemble Sandwiches
Butter one side of each bread slice with the remaining tablespoon of butter. Place 2 slices, buttered-side down, on the grill. Layer with 1 slice of cheese, half of the scrambled eggs, 2 strips of bacon, a second slice of cheese, and then top with the remaining bread, buttered-side up.
5. Grill Sandwiches
Cook the sandwiches on the grill until golden brown on the bottom, about PT4M (4 minutes). Carefully flip the sandwiches and grill the other side until golden and the cheese has melted, about PT4M (4 minutes) more.
6. Serve Warm
Remove from the grill and let them rest for a minute. Slice sandwiches in half and serve immediately.
