The Ultimate Stir-Fried Chicken and Vegetable Delight
Ingredients
- 4 Boneless skinless chicken breasts
- 2 cups brown rice
- 4 scallions, chopped
- ½ cup soy sauce
- 2 cups broccoli florets
- 2 medium carrots, julienned
Instructions
1. Cook brown rice according to package instructions, set aside.
2. Slice the chicken breasts into thin strips.
3. In a large skillet or wok, heat 2 tablespoons of oil over medium heat.
4. Add the chicken strips and cook until browned and cooked through, about 8 minutes. Remove from the skillet and set aside.
5. In the same skillet, add another tablespoon of oil if needed, then add the scallions, broccoli, and carrots. Stir fry for 4-5 minutes, until the vegetables are tender-crisp.
6. Return the cooked chicken to the skillet.
7. Pour soy sauce over the ingredients and stir well to combine. Continue cooking for 2-3 minutes, until heated through.
8. Serve the stir-fried chicken and vegetables over a bed of brown rice.
