Ingredients
- 1 cup Quinoa
- 1 can Black beans, drained and rinsed
- 1 cup Corn kernels
- 1 cup Cherry tomatoes, halved
- 1/2 Red onion, finely chopped
- 2 tablespoons Lime juice
- 1/4 cup Cilantro, chopped
- 3 tablespoons Olive oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 Avocado, diced
Instructions
1. Cook the quinoa according to package instructions. Once cooked, allow it to cool.
2. In a large mixing bowl, combine the cooked quinoa, black beans, corn, cherry tomatoes, red onion, lime juice, cilantro, olive oil, salt, and black pepper.
3. Gently toss all the ingredients together until well combined.
4. Add the diced avocado on top and gently fold it into the salad.
5. Adjust salt and pepper if needed and let the flavors marinate for at least 10 minutes before serving.
