Spicy Stir-Fried Pig Feet: A Culinary Delight



Ingredients


- 2 pounds of pig feet
- 6 dried chili peppers
- 2 onions
- 2 inches ginger

Instructions


1. Start by cleaning the pig feet thoroughly under cold running water. Remove any excess fat and hair.
2. Fill a large pot with water and bring it to a boil. Add the cleaned pig feet and blanch for 5 minutes. Drain and set aside.
3. Remove the stems and seeds from the dried chili peppers. Finely chop them and set aside.
4. Peel and dice the onions. Peel and mince the ginger.
5. Heat a wok or a large skillet over high heat. Add a tablespoon of oil and swirl it around to coat the surface.
6. Add the onions and ginger to the hot pan and stir-fry for 2-3 minutes until they become fragrant and slightly caramelized.
7. Add the pig feet and dried chili peppers to the pan. Stir-fry for another 5 minutes, allowing the flavors to meld together.
8. Reduce the heat to medium and cover the pan. Stir occasionally and cook for about 1 hour until the pig feet become tender and the meat starts to fall off the bones.
9. Once the pig feet are tender, remove the lid and increase the heat to high. Stir-fry for an additional 5 minutes to crisp up the edges.
10. Serve the spicy stir-fried pig feet hot with steamed rice or as a filling for tacos.
