Spicy Seared Scallop and Potato Dinner
Ingredients
- 16 Diver Scallops
- 1 large onion, diced
- 1/4 cup chives, chopped
- 1/2 cup butter
- 4 cloves of garlic, minced
- 4 large potatoes, peeled and diced
- 2 Jalapenos, thinly sliced
- 2 cups Pea Leaves
Instructions
1. In a large skillet, melt 2 tablespoons of butter over medium heat.
2. Add the diced onions and cook until translucent.
3. Add the minced garlic and cook for another minute.
4. Add the diced potatoes and cook until golden brown and cooked through.
5. Remove the potatoes from the skillet and set aside.
6. In the same skillet, melt the remaining butter over high heat.
7. Season the scallops with salt and pepper, then sear them for 2-3 minutes on each side until golden brown.
8. Add the sliced Jalapenos and cook for another minute.
9. Add the Pea Leaves and cook until wilted.
10. Serve the scallops over the potatoes and garnish with chives.
