Spicy Ham & Egg Breakfast Burritos Extravaganza!



Ingredients


- 8 slices of Honey ham
- 8 large eggs
- 4 green onions, finely chopped
- 4 large flour tortillas
- 2 large tomatoes, diced
- 2 tbsp hot sauce (adjust to taste)
- 2 fresh chilies, diced
- 1 cup of shredded cheese (choose your preferred variety)

Instructions


1. First, preheat a pan on medium heat.
2. Add the honey ham slices and cook until they turn brown - about 2-3 minutes on each side. Once done, remove from pan and set aside.
3. In the same pan, add the eggs and scramble them gently. When they are about half-way cooked, add in the chopped green onions. Continue to scramble until fully cooked.
4. Warm your flour tortillas on a dry pan until they become pliable - about 15 seconds per side should do it.
5. Onto each tortilla, spread the honey ham slices, scrambled eggs, diced tomatoes, a sprinkle of shredded cheese, hot sauce, and fresh chilies.
6. Roll the lower edge of tortilla upward to create the burrito, then fold in the sides and continue rolling until the top edge is wrapped. Repeat for the rest.
7. Place the burritos seam-side down back into the dry pan. Cook until the bottoms are browned, about 2 minutes, then flip and cook the other side for another 2 minutes.
8. Serve hot and enjoy!
