- 1 medium tomato, diced
- 1 jalapeño, seeded and finely chopped
- 1 cup sharp Cheddar cheese, shredded

Instructions
1. Prepare Ingredients
Begin by prepping all your ingredients. Dice the onion and tomato, and finely chop the jalapeño after removing its seeds. Shred the Cheddar cheese and set everything aside.
2. Heat the Skillet
Set a large, non-stick skillet over medium heat, adding the olive oil. Allow it to thoroughly heat for about 2 minutes before adding the vegetables.
3. Sauté Vegetables
Add the diced onion to the heated skillet and sauté for about 3 minutes until they turn translucent. Then, add the diced tomato and chopped jalapeño to the skillet, cooking for an additional 2 minutes. Stir occasionally to evenly cook and blend the flavors.
4. Prepare the Eggs
In a separate bowl, crack the eggs and whisk them together with a dash of salt and pepper. Make sure the mixture is well combined.
5. Cook the Eggs
Reduce the heat to low and pour the whisked eggs over the sautéed vegetables. Gently stir the eggs, pushing them from the edges toward the center to form soft, curd-like structures. This should take about 5 minutes, or until the eggs are cooked to your desired consistency.
6. Add Cheese
Sprinkle the shredded Cheddar cheese over the eggs, allowing it to melt. This should take about 1-2 minutes.
7. Garnish and Serve
