Slow Cooker Chicken & Sausage Gumbo for Lunch

Instructions
- Start by chopping onions and peppers. Set your slow cooker on high and add some oil. Toss in the onions and peppers, stirring them around so they get fully coated in the oil.
- Brown the sausage in a skillet over medium heat, then remove it and add it to the slow cooker.
- In the same skillet, add the chicken and cook until golden brown. Once it reaches this stage, transfer it to the slow cooker as well.
- Roux needs a slow cook, so turn the heat down to low and add your roux. Stir consistently until it has melted completely before adding it to the slow cooker.
- Finally, rinse and add the rice to the slow cooker. Cover it with the lid and let it cook for the projected time.
- Once your gumbo is cooked thoroughly, stir it up to make sure all components have blended nicely. Let it cool down before serving.
