Slow Cooker Beef Tenderloin with Mushroom Gravy and Carrots
Ingredients:
- 1.5 lb beef tenderloin
- 1 cup mushrooms, sliced
- 2 carrots, peeled and sliced
- 2 cups beef gravy
- Salt and pepper, to taste
Instructions:
- Season the beef tenderloin with salt and pepper on all sides.
- Place the seasoned beef tenderloin in a slow cooker and cover it with mushrooms and carrots.
- Pour the beef gravy over the ingredients in the slow cooker, making sure everything is well coated.
- Cover the slow cooker and set it to cook on low heat for 6-8 hours or on high heat for 3-4 hours. The low heat will result in more tender meat.
- After the cooking time, carefully remove the beef tenderloin from the slow cooker and let it rest for a few minutes on a cutting board.
- Meanwhile, strain the mushroom and carrot mixture from the slow cooker, reserving the liquid for the gravy.
- In a saucepan, heat the reserved liquid over medium heat until it starts to simmer.
- Add a tablespoon of flour (optional) and whisk continuously until the gravy thickens to your desired consistency.
- While the gravy is simmering, slice the beef tenderloin into thick medallions.
- Serve the sliced beef tenderloin with the mushroom and carrot mixture on a plate and drizzle the mushroom gravy on top.
- You can also accompany this dish with mashed potatoes or buttered noodles.
