Ingredients
- 2 Ribeye steaks, about 1 inch thick
- 4 large eggs
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 tablespoon unsalted butter
Instructions
1. Prepare the Kamado Joe:
- Begin by setting up your Kamado Joe for direct heat at medium-high temperature, approximately 450°F. Allow it to preheat for about 15 minutes.
2. Season the Steaks:
- Pat the steaks dry with paper towels to ensure a good sear.
- Rub both sides of each steak with olive oil, then season generously with salt and pepper.
3. Cook the Steaks:
- Place the steaks directly on the grill grate. Close the lid and grill for 4 minutes on the first side.
- Flip the steaks and continue to grill for another 3-4 minutes, or until they reach your desired level of doneness (Aim for an internal temperature of 130°F for medium-rare).
- Remove the steaks from the grill and let them rest under a tent of aluminum foil for 5 minutes.
4. Prepare the Eggs:
- While the steaks are resting, heat the butter in a cast iron skillet on the Kamado Joe.
- Crack the eggs into the skillet, seasoning each with a pinch of salt and pepper.
- Fry the eggs to your preferred doneness. If desired, cover the skillet with a lid to cook the tops of the eggs without flipping.
5. Serve the Dish:
- Slice the steaks against the grain and arrange on plates.
- Top each serving of steak with two sunny-side-up eggs.
