Pork Tenderloin with Cheesy Scalloped Potatoes and Buttered Green Beans



Ingredients:



  • 1 pork tenderloin

  • 4 medium-sized potatoes

  • 1 pound green beans

  • 4 tablespoons butter, divided

  • 1 cup grated cheese (cheddar or Gruyère)



Instructions:



Preparing the Pork Tenderloin:



  1. Preheat your Kamado Joe grill to medium-high heat, around 400°F (200°C).

  2. Season the pork tenderloin with salt and pepper, ensuring it is evenly coated.

  3. Place the tenderloin on the grill and cook for about 20 minutes, turning it occasionally, until the internal temperature reaches 145°F (63°C).

  4. Remove the pork tenderloin from the grill and let it rest for 5 minutes before slicing.



Making Cheesy Scalloped Potatoes:



  1. Preheat your oven to 375°F (190°C).

  2. Peel and thinly slice the potatoes.

  3. In a greased baking dish, arrange a layer of potato slices, slightly overlapping each other.

  4. Sprinkle a pinch of salt and pepper over the potato layer, then dot it with small pieces of butter.

  5. Repeat the process for two more layers, seasoning and adding butter each time.

  6. After the final layer, pour half a cup of milk over the potatoes.

  7. Cover the baking dish with foil and bake for 40 minutes.

  8. Remove the foil, sprinkle the grated cheese over the potatoes, and bake for an additional 15 minutes, or until the cheese is golden and bubbly.



Cooking Buttered Green Beans:



  1. Bring a pot of salted water to a boil.

  2. Add the green beans to the boiling water and cook for 4-5 minutes, until they are bright green and tender-crisp.

  3. Drain the green beans and immediately transfer them to a bowl filled with ice water to stop the cooking process.

  4. In a large skillet, melt 2 tablespoons of butter over medium heat.

  5. Add the blanched green beans to the skillet and toss for 2-3 minutes, until they are coated in butter and heated through.

- Layer the potato slices in a greased baking dish, seasoning and adding butter between layers.
- Pour milk over the final layer of potatoes.
- Bake covered for 40 minutes, then uncover, sprinkle cheese, and bake for an additional 15 minutes.

3. Cooking Buttered Green Beans:
- Boil salted water and blanch the green beans for 4-5 minutes.
- Transfer beans to ice water.
- In a skillet, melt butter, add green beans, and cook until coated and heated through.
