Oven-Baked Creamy Mushroom and Chicken Rice



Ingredients



  • 1 cup of long grain rice

  • 2 boneless, skinless chicken breasts

  • 1 can of cream of mushroom soup

  • 2 cups of chicken broth

  • 1 cup of sliced mushrooms

  • 1 diced onion

  • 2 cloves of garlic, minced

  • Salt and pepper to taste

  • Parsley for garnish



Instructions



  1. Preheat your oven to 180°C (350°F).

  2. In a baking dish, evenly spread the rice on the bottom.

  3. Place the chicken breasts on top of the rice.

  4. In a large bowl, combine the cream of mushroom soup, chicken broth, mushrooms, onion, garlic, salt, and pepper. Mix well.

  5. Pour this mixture over the chicken and rice.

  6. Cover the baking dish with foil and bake for 45 minutes.

  7. Remove the foil and bake for an additional 15 minutes or until the rice is cooked and the chicken is golden and cooked through.

  8. Remove from the oven and let it rest for a few minutes before serving.

  9. Garnish with parsley and serve. Enjoy!
