Mouthwatering Beef and Carrot Stir-Fry with Peanut Butter Sauce


Ingredients:



  • 500g beef, thinly sliced

  • 3 tablespoons peanut butter

  • 2 large carrots, julienned



Instructions:



Step 1: Prep and Marinate the Beef



  1. Begin by slicing the beef into thin strips. For a tender stir-fry, ensure that you slice against the grain.

  2. In a mixing bowl, combine the beef with your choice of marinade (soy sauce, ginger, garlic, and a dash of sesame oil). Toss the beef to coat it evenly, cover the bowl, and let it marinate in the refrigerator for at least 30 minutes.



Step 2: Prepare the Peanut Butter Sauce



  1. In a small saucepan, melt the peanut butter over low heat, stirring constantly to prevent burning.

  2. Gradually add water or chicken broth, about 1-2 tablespoons at a time, while continuing to stir until the sauce reaches a smooth and pourable consistency. If desired, you can add a touch of honey or brown sugar to balance the flavors.

  3. Remove the saucepan from heat and set aside.



Step 3: Sauté the Carrots



  1. Heat a large skillet or wok over medium-high heat and add a drizzle of vegetable oil.

  2. Add the julienned carrots to the skillet and stir-fry for 2-3 minutes until they begin to soften but still retain some crunch.

  3. Transfer the cooked carrots to a plate and set aside.



Step 4: Cook the Beef



  1. Using the same skillet or wok, add another drizzle of vegetable oil if necessary to prevent sticking.

  2. Remove the marinated beef from the refrigerator and transfer it to the hot skillet.

  3. Sauté the beef over high heat, stirring continuously, until it is browned and cooked through, approximately 3-4 minutes.



Step 5: Combine and Serve



  1. Return the sautéed carrots to the skillet with the cooked beef.

  2. Pour the peanut butter sauce over the beef and carrots, tossing everything together until the ingredients are evenly coated in the delicious sauce.

  3. Continue to cook for another minute or so, allowing the flavors to meld together.
