Michelin-worthy Pork Stew with Roasted Potatoes and Vegetables
Ingredients:
- 1.5 pounds pork shoulder, cut into bite-sized cubes
- 4 medium potatoes, peeled and quartered
- 4 medium carrots, peeled and sliced
- 1 bunch cilantro, stems removed and leaves chopped
- 1 cup cooked beans (such as cannellini or navy beans)
- 4 cups chicken or vegetable broth
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat.
- Add the pork cubes to the pot and cook until browned on all sides, about 5 minutes. Remove the pork from the pot and set it aside.
- In the same pot, add the minced garlic, chopped onion, paprika, dried thyme, salt, and black pepper. Stir well and cook for 2-3 minutes, or until the onions are translucent and the spices are fragrant.
- Add the browned pork back to the pot, along with the chicken or vegetable broth. Bring the mixture to a boil.
- Once boiling, cover the pot with a lid and transfer it to the preheated oven. Let it cook for 1 hour.
- Meanwhile, in a separate baking dish, toss the quartered potatoes and sliced carrots with a drizzle of olive oil, salt, and pepper. Place the baking dish in the oven and roast for 30 minutes, or until the vegetables are tender and slightly caramelized.
- Remove the pot from the oven and stir in the cooked beans and chopped cilantro. Return the pot to the oven for an additional 15 minutes.
- Once the stew is done, remove it from the oven and let it cool slightly before serving.
- To serve, ladle the pork stew into bowls and top with the roasted potatoes and carrots. Garnish with additional cilantro leaves if desired.
