Beef Breakfast Hash
Ingredients:
1 lb beef (cut into small cubes)
2 potatoes (peeled and diced)
1 onion (diced)
1 bell pepper (diced)
4 cloves garlic (minced)
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
4 eggs
Fresh parsley (chopped, for garnish)Instructions:
In a large skillet, heat the olive oil over medium heat.
Add the beef cubes to the skillet and cook until browned on all sides. Remove the beef from the skillet and set aside.
In the same skillet, add the diced potatoes and cook until they are golden brown and crispy. <
Add the diced onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are softened.
Return the beef to the skillet and mix well with the cooked vegetables.
Sprinkle paprika, dried thyme, salt, and black pepper over the mixture. Stir to evenly coat all the ingredients.
Preheat the oven to 375°F (190°C).
Transfer the beef and vegetable mixture to a baking dish and spread it out evenly.
Create four small wells in the mixture and crack one egg into each well.
Place the baking dish in the preheated oven and bake for about 15-18 minutes, or until the eggs are cooked to your desired doneness.
Remove the dish from the oven and let it cool slightly.
Garnish with freshly chopped parsley.
Serve the beef breakfast hash hot, dividing it into four portions.Preparation Time: 20 minutes
