Irresistible Surf and Turf lunch recipe: Pan-Fried Fish with Herb-Crusted Topping



Ingredients


- 4 fillets of fresh halibut (6 oz each)
- 4 fillets of salmon (6 oz each)
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh herbs (parsley, thyme, and rosemary)
- Salt and pepper to taste
- Olive oil
- Lemon wedges for serving

Instructions


1. Preheat your oven to 400°F.
2. In a mixing bowl, combine breadcrumbs, parmesan cheese, chopped herbs, salt, and pepper.
3. Lightly coat the fish fillets with olive oil and then press the herb-crumb mixture onto each fillet.
4. Heat a non-stick skillet over medium heat and pan fry the fish fillets for 2-3 minutes on each side until golden brown.
5. Transfer the pan-seared fish fillets to a baking dish and roast in the oven for 8-10 minutes, or until the fish is cooked through.
6. Serve hot with lemon wedges on the side.
