Irresistible Oven-Baked Pork Chops with Green Beans and Scallions



Ingredients


- 4 pork chops (about 1-inch thick)
- 1 lb green beans, trimmed
- 1/4 cup ketchup
- 1 cup chicken broth
- 4 scallions, thinly sliced
- Salt and pepper to taste

Instructions


1. Preheat your oven to 375°F (190°C).
2. Season the pork chops generously with salt and pepper on both sides.
3. In a large oven-safe skillet, heat some olive oil over medium-high heat. Sear the pork chops until golden brown, about 3 minutes per side.
4. Remove the skillet from heat and transfer the pork chops to a plate.
5. In the same skillet, add the green beans and scallions. Sauté for 2 minutes until slightly softened.
6. Add the ketchup and chicken broth to the skillet, stirring well to combine with the vegetables.
7. Return the pork chops to the skillet, nestling them among the green beans.
8. Cover the skillet with aluminum foil and transfer it to the preheated oven. Bake for 15-20 minutes or until the pork chops reach an internal temperature of 145°F (63°C).
9. Remove the foil and broil for an additional 2-3 minutes to crisp up the top.
10. Let the dish rest for 5 minutes before serving. Enjoy!
