Ingredients
- 4 large tortillas
- 2 cups shredded chicken (cooked)
- 1 1/2 cups shredded cheese (Monterey Jack or Cheddar)
- 1 cup pico de gallo
- 1 cup guacamole
- 1 jalapeno, thinly sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
1. Prepare the Filling:
- In a medium bowl, combine shredded chicken and pico de gallo. Season with salt and pepper to taste. Set aside.
2. Assemble the Quesadillas:
- Lay out the tortillas on a flat surface.
- Evenly distribute the chicken and pico mixture over half of each tortilla.
- Sprinkle shredded cheese generously over the chicken mixture.
- Place a few slices of jalapeno on top for extra heat, customizing to taste.
3. Fold and Seal:
- Fold each tortilla over to cover the fillings, pressing gently to seal the edges.
4. Preheat the Pan:
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat until shimmering.
5. Pan-Fry the Quesadillas:
- Carefully place the quesadillas into the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy, then flip and cook for an additional 3-4 minutes. Repeat with the remaining quesadillas, adding more oil as necessary.
6. Serve:
- Remove from heat and cut each quesadilla into wedges.
- Serve hot with a dollop of guacamole on top or on the side for dipping.
