Ingredients

Instructions
1. Prep the Ingredients: Begin by washing the vegetables and slicing the chicken breast into bite-sized cubes. Dice the carrots and slice the mushrooms while keeping other mixed vegetables ready.
2. Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of jasmine rice, a pinch of salt, and cover. Lower the heat and let it simmer for 15 minutes or until the rice is tender and has absorbed the water. Fluff with a fork and set aside.

7. Serve: Divide the chicken and mushroom rice mix into four bowls. Garnish with fresh herbs like parsley or chives if desired. Serve warm.
