**Herb Crusted Rib Roast with Roasted Vegetables and Homemade Bread Crumbs**



Ingredients




  • 1 whole Rib Roast, 4-5 pounds

  • 1 pound of potatoes, cleaned and cut in halves

  • 2 large onions, peeled and quartered

  • 4 slices of bread, toasted and crumbled

  • 5 carrots, peeled and cut into chunks



Instructions




  • Firstly, preheat your oven to 450 degrees Fahrenheit. Season your rib roast with salt and pepper, then place it in a roasting pan fat-side up.

  • Arrange your potatoes, onions and carrots around the roast in the pan. Drizzle some olive oil over the vegetables, tossing them lightly to coat them in the oil.

  • Place the pan in the oven and roast everything for 15 minutes. After 15 minutes, turn down the heat to 350 degrees Fahrenheit and continue roasting for another 2 hours.

  • While the roast is cooking, prepare your homemade bread crumbs by toasting the bread slices. After toasting, crumble the slices into small bits to create your bread crumbs.

  • About half an hour before the roast is done, sprinkle your homemade bread crumbs over the roast and the vegetables. Return it to the oven to finish cooking.

  • Once the roast is ready, remove it from the oven and let it rest for 15 minutes before carving. Serve your rib roast with the roasted vegetables on the side.

Instructions



1. Preheat your oven to 230 degrees Celsius.
2. Season the rib roast with salt and pepper, then place it in a roasting pan fat-side up.
3. Arrange potatoes, onions, and carrots around the roast in the pan. Drizzle olive oil over the vegetables and toss lightly to coat.
4. Place the pan in the oven and roast for 15 minutes at 230 degrees Celsius.
5. Reduce heat to 175 degrees Celsius and continue roasting for 2 hours.
6. While the roast is cooking, toast the bread slices and crumble them to make bread crumbs.
7. Thirty minutes before the roast is done, sprinkle homemade bread crumbs over the roast and vegetables. Return to the oven.
8. Once the roast is cooked, remove from the oven and let it rest for 15 minutes before carving. Serve with the roasted vegetables on the side.
