Ingredients



- 1 pound beef stew meat, cut into 1-inch cubes
- 1 tablespoon olive oil
- 4 cups beef broth
- 1 cup barley
- 2 large carrots, peeled and sliced
- 2 large potatoes, peeled and diced
- 1 medium onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf

Instructions



1. Prepare Ingredients: Ensure all vegetables are peeled and chopped as per the instructions above. Set aside.

2. Brown the Beef: In a large pot, heat olive oil over medium heat. Add beef cubes and brown on all sides, approximately 5-7 minutes. Remove beef from the pot and set aside.

3. Sauté Aromatics: In the same pot, add chopped onion and minced garlic. Sauté until the onion becomes translucent and begins to caramelize, about 4 minutes.

4. Deglaze Pot: Pour in a small amount of beef broth to deglaze the pot, using a wooden spoon to scrape up any browned bits from the bottom.

5. Combine Ingredients: Return the browned beef to the pot. Add remaining beef broth, barley, carrots, potatoes, salt, black pepper, dried thyme, and bay leaf. Stir to combine all ingredients.

6. Simmer: Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and simmer for about 1 hour, stirring occasionally, until the barley is tender and the flavors are well melded.

7. Adjust Seasoning: Taste and adjust seasoning, adding more salt or pepper if desired. Remove and discard the bay leaf before serving.

8. Serve: Ladle the stew into bowls and enjoy a warm, filling dinner.
