Grilled BBQ Chicken Stuffed Bell Peppers

Ingredients:

  • 4 chicken breasts

  • 4 bell peppers (any color)

  • 1 cup BBQ sauce

  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)

  • 2 tablespoons butter, melted

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Prepare the chicken breasts by pounding them to an even thickness. This will help ensure they cook evenly on the grill.

  3. Place the chicken breasts on a preheated grill or grill pan and cook for about 4-5 minutes per side, or until they reach an internal temperature of 165°F (75°C). Remove from the grill and let them rest for a few minutes.

  4. While the chicken is resting, cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water to clean the insides.

  5. Brush the inside of each bell pepper with melted butter to enhance the flavor and help with the grilling process.

  6. Generously brush the outside of each bell pepper with BBQ sauce. Reserve a little extra sauce for later.

  7. Once the chicken has rested, slice it into thin strips or dice it into small cubes.

  8. Stuff each bell pepper with the sliced or diced chicken, filling them almost to the top.

  9. Top each stuffed bell pepper with a sprinkle of shredded cheese.

  10. Place the stuffed bell peppers on a baking sheet and transfer them to the preheated oven. Bake for 15-20 minutes, or until the bell peppers are tender and the cheese is melted and lightly golden.

  11. Remove the stuffed bell peppers from the oven and let them cool for a few minutes.

  12. Drizzle a little extra BBQ sauce on top of each stuffed bell pepper for added flavor.

  13. Serve the Grilled BBQ Chicken Stuffed Bell Peppers hot as a delicious and visually appealing dinner option!
