1. Begin by preparing the apples: wash them thoroughly under cool running water. Once washed, core and slice each apple into even wedges, about 1/2 inch thick.
2. In a mixing bowl, combine the brown sugar, ground cinnamon, and vanilla extract. Stir until smooth and well-blended. Add the apple wedges to the bowl, tossing them gently to coat each piece evenly with the mixture.
3. Preheat the flat grill over medium heat. Melt the unsalted butter on the grill surface, allowing it to bubble and foam slightly, but not burn.
4. Once the butter is melted, carefully place the apple wedges on the grill in a single layer. Grill the apples for about 5-7 minutes, flipping them halfway through until they are tender and have beautiful grill marks.
5. During the last minute of grilling, sprinkle the chopped walnuts over the apples to toast them slightly. This will enhance their flavor and provide a delicious crunch.
