Green Chili Chicken Enchiladas Recipe



Ingredients


- 4 chicken breasts
- 2 cups green enchilada sauce
- 2 cups Monterey Jack cheese, shredded
- 1 cup green chiles, chopped
- 10 white corn tortillas

Instructions


1. Preheat the oven to 375°F (190°C).
2. Cook the chicken breasts in a pan until fully cooked, then shred the meat.
3. In a separate bowl, combine the shredded chicken, green enchilada sauce, half of the Monterey Jack cheese, and green chiles.
4. Warm the tortillas in the oven for a few minutes until pliable.
5. Spoon the chicken mixture onto each tortilla and roll them up, placing them seam-side down in a baking dish.
6. Pour any remaining sauce over the enchiladas and sprinkle with the remaining Monterey Jack cheese.
7. Bake for 20-25 minutes until the cheese is melted and bubbly.
8. Serve hot and enjoy!
