Ingredients
For the Grilled Cheese:
- 4 slices of bread
- 2 tablespoons butter, softened
- 4 ounces cheddar cheese, sliced

- 2 cups tomato soup (canned or homemade)
- 1/2 cup heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh basil, finely chopped (or 1/2 teaspoon dried basil)
Instructions
1. Prepare the Grilled Cheese:
- Spread butter evenly on one side of each slice of bread. Ensure every corner is covered for even browning.
- Lay out two slices, buttered side down, and evenly distribute the cheddar cheese on top.
- Place the remaining bread slices on top, buttered side up.
- Heat a non-stick pan over medium heat.
- Place the sandwiches in the pan, letting each side cook for about 3-4 minutes or until golden brown and the cheese is melted. Gently press down with a spatula to ensure even cooking.
2. Prepare the Tomato Basil Soup:
- In a medium saucepan, pour in the tomato soup. Heat over medium heat, stirring occasionally.
- Gradually stir in the heavy cream, ensuring it blends smoothly with the tomato base.
- Season with salt and black pepper to taste.
- Stir in the chopped basil.
- Let the soup simmer for about 10 minutes, allowing the flavors to meld together.
3. Serve:
- Cut the grilled cheese sandwiches diagonally to form triangles.
- Serve hot with a bowl of the creamy basil tomato soup on the side.
- Optionally, garnish the soup with a small basil leaf or a drizzle of cream for a gourmet touch.
