Creamy Italian Sausage and Bell Pepper Rice Delight
Ingredients
- 1 pound Italian sausage, casing removed
- 2 medium bell peppers (1 red, 1 green), sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 1/2 cups rice
- 3 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese (optional)
Instructions
1. Prepare the Ingredients:
- In a medium skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up into crumbles with a wooden spoon. Cook until browned, about 5 minutes.
2. Set Up the Slow Cooker:
- Transfer the browned sausage into the slow cooker.
- To the same skillet, add the chopped onions and sliced bell peppers. Sauté until the onions are translucent, approximately 4 minutes. Add the minced garlic and sauté for an additional minute. Transfer this mixture to the slow cooker.
3. Add Rice and Seasonings:
- Add the rice, chicken broth, oregano, salt, and black pepper to the slow cooker. Stir to combine all the ingredients evenly.
4. Slow Cook:
- Cover the slow cooker and set it to low. Cook for 3 to 4 hours, or until the rice is tender and has absorbed most of the liquid.
5. Finish and Serve:
- Once cooked, stir the mixture to fluff the rice. If desired, sprinkle with grated Parmesan cheese for a creamy finish.
- Serve hot, garnished with additional Parmesan or fresh herbs, if available.
