Chicken Tomato Onion Green Bean Dinner Recipe
Ingredients
- 4 chicken breasts
- 4 medium-sized tomatoes
- 2 onions
- 1 cup white wine
- 2 cups green beans
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some olive oil over medium-high heat.
3. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until both sides are golden brown.
4. Remove the chicken breasts from the skillet and transfer them to a baking dish.
5. Cut the tomatoes into thick slices and slice the onions.
6. In the same skillet, sauté the onions until they become translucent.
7. Add the white wine to deglaze the skillet, scraping the bottom to gather any browned bits.
8. Layer the tomato slices and sautéed onions over the chicken breasts in the baking dish.
9. Pour the wine from the skillet over the chicken and vegetables.
10. Cover the baking dish with foil and roast in the oven for about 25 minutes.
11. Meanwhile, bring a pot of salted water to a boil. Add the green beans and cook until crisp-tender for about 5-6 minutes.
12. Remove the foil from the baking dish and continue baking for an additional 10 minutes to allow the chicken to fully cook and the flavors to meld together.
13. Serve the chicken with the tomatoes, onions, and green beans on the side.
