Award-Winning Cinnamon Glazed Chicken with Roasted Vegetables Recipe


Ingredients


- 4 Chicken Breasts
- 4 Potatoes (medium-sized)
- 2 Bell Peppers (any color)
- 2 Zucchinis
- 1 Butternut Squash
- 2 Onions
- 2 tablespoons Brown Sugar
- 1 teaspoon Cinnamon
- 4 tablespoons Butter

Instructions


1. Preheat your oven to 400°F (200°C).
2. Prepare the vegetables by peeling and dicing the potatoes, bell peppers, zucchinis, butternut squash, and onions.
3. In a large mixing bowl, combine the diced vegetables, brown sugar, cinnamon, and 2 tablespoons melted butter. Toss well to evenly coat the vegetables with the glaze.
4. Place the glazed vegetables onto a large baking sheet, spreading them out in a single layer.
5. Season the chicken breasts with salt and pepper on both sides.
6. In a separate oven-safe skillet, heat the remaining 2 tablespoons of butter over medium heat until melted.
7. Add the seasoned chicken breasts to the skillet and sear them for about 3-4 minutes on each side until golden brown.
8. Once seared, place the skillet with the chicken breasts into the preheated oven along with the baking sheet of glazed vegetables.
9. Bake for approximately 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring the vegetables once halfway through cooking.
10. Carefully remove the skillet and baking sheet from the oven using oven mitts.
