The Ultimate Parmesan Crusted Chicken with Tomato Sauce
Ingredients
Chicken:
- 1 whole chicken (approximately 1.5 kg)
Onions:
- 2 medium onions (about 200g), finely chopped
Parmesan:
- 1 cup Parmesan cheese (about 100g), grated
Tomato sauce:
- 2 cups tomato sauce (about 480ml)
Bread:
- 4 slices of bread (about 120g), crusts removed and toasted
Garlic:
- 4 cloves of garlic, minced
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some olive oil over medium heat. Add the minced garlic and cook until fragrant.
3. Add the chopped onions to the skillet and sauté until they become translucent and slightly caramelized.
4. Prepare the Parmesan crust by pulsing the toasted bread in a food processor until fine breadcrumbs, then adding the grated Parmesan and pulsing to combine.
5. Season the chicken pieces with salt and pepper.
6. Dip each chicken piece into the Parmesan crust mixture, pressing lightly to adhere. Repeat for all pieces.
7. Brown the chicken pieces in a skillet with olive oil until golden and crusty. Remove and set aside.
8. Reduce the heat, add tomato sauce to the skillet, and simmer until heated through.
9. Transfer the tomato sauce to an oven-safe dish and arrange the chicken on top.
10. Cover with foil and bake for 45 minutes, then remove foil, sprinkle extra Parmesan, and broil until golden and bubbly.
11. Serve hot with tomato sauce.
