Seared NY Strip Steak with Roasted Potatoes and Green Beans
Ingredients
- 2 NY strip steaks, about 12 oz each
- 1 lb of potatoes, cut into 1-inch cubes
- 1 lb of green beans, trimmed
- 1 large onion, thinly sliced
- 6 strips of bacon
- 8 oz turkey breast, thinly sliced
- 1 cup of salsa
Instructions
- Preheat the oven to 400°F (200°C).
- Place the potatoes on a baking sheet, add a little oil, salt and pepper. Put them in the oven and roast for about 25 minutes.
- While the potatoes are roasting, sauté the bacon in a large skillet until crispy. Remove and set aside, leaving the bacon grease in the skillet.
- Add the onions to the skillet and cook until softened and browned. Remove from skillet and set aside.
- Next, cook the green beans in the same skillet until they are tender. Remove and set aside.
- In the same skillet, add a little oil if needed, and pan-fry the steaks for about 4 minutes on each side, or to your desired doneness. Once done, set the steaks aside to rest.
- While the steaks are resting, in the same skillet, add the sliced turkey and sauté until fully cooked.
- Return all the previously cooked ingredients (bacon, onions, green beans) back to the skillet and add the salsa. Simmer for a few minutes to heat up all the ingredients.
- Once the potatoes are done, remove from the oven and add them to the skillet and gently fold them into the rest of the ingredients.
- Serve the steak with the skillet mixture on the side.
