Baked Spaghetti Squash with Ground Beef and Tomato Sauce
Ingredients
Spaghetti squash - 454 grams
Ground beef - 454 grams
Cheese - 225 grams (Parmesan, grated)
Tomatoes - 454 grams
Onion - 115 grams
Instructions
1. Preheat your oven to 190°C.
2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, and place the halves on a baking sheet cut-side down. Bake for 45 minutes to 1 hour, or until the squash becomes tender.
3. While the spaghetti squash is baking, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small crumbles. Drain any excess fat.
4. Add the diced tomatoes and finely chopped onions to the skillet with the cooked ground beef. Stir well and let it simmer for about 10 minutes to allow the flavors to meld together.
5. Once the spaghetti squash is done baking, remove it from the oven and let it cool for a few minutes. Use a fork to scrape the flesh of the squash, creating strands that resemble spaghetti noodles.
6. Transfer the spaghetti squash strands to the skillet with the meat sauce. Mix everything together until well combined.
7. Preheat your broiler on high.
8. Transfer the spaghetti squash and meat mixture to a baking dish. Sprinkle the cheese evenly over the top.
9. Place the baking dish under the broiler for 3-5 minutes, or until the cheese is melted and slightly browned.
10. Remove from the broiler and let it cool for a few minutes. Serve hot.
