Spicy Curry Rack of Lamb with Tomato Rice
Ingredients
- 1 rack of lamb (approximately 2 pounds)
- 1 cup rice
- 2 tablespoons curry powder
- 4 tomatoes, chopped
Instructions
1. Preheat the oven to 400°F (200°C).
2. Season the rack of lamb generously with salt and pepper.
3. In a large skillet over medium-high heat, sear the rack of lamb on all sides until browned.
4. Transfer the lamb to a roasting pan and place it in the preheated oven. Cook for 20-25 minutes for medium-rare, or adjust according to your preferred doneness.
5. Meanwhile, in a separate saucepan, cook the rice according to the package instructions.
6. In the same skillet used for the lamb, add the curry powder and toast it for a minute until fragrant.
7. Add the chopped tomatoes and cook until they start to soften and release their juices.
8. Stir in the cooked rice and mix well to combine. Season with salt and pepper to taste.
9. Take the rack of lamb out of the oven and let it rest for a few minutes before slicing into individual chops.
10. Serve the lamb chops over the tomato rice and garnish with fresh herbs, if desired.
