BBQ Chicken and Potato Skillet
Ingredients
- 4 boneless skinless chicken breasts
- 1 can of beans (15 oz)
- 1 onion, diced
- 4 potatoes, cut into cubes
- 1/2 cup of BBQ sauce
- 1 cup of corn kernels
- 1 teaspoon of thyme
- 1 teaspoon of cumin
- 1 teaspoon of rosemary
Instructions
1. Preheat your Kamado Joe grill to medium-high heat.
2. Season the chicken breasts with salt, pepper, and the spices (thyme, cumin, and rosemary). Let them sit for 10 minutes.
3. In a skillet, heat some oil over medium heat. Add the onions and cook until softened.
4. Push the onions to one side of the skillet and add the chicken breasts. Cook for 4-5 minutes on each side or until browned.
5. Add the potatoes, beans, and corn to the skillet. Stir well to combine.
6. Pour the BBQ sauce over the ingredients and toss everything together.
7. Cover the skillet and place it on the preheated grill. Cook for about 20-25 minutes or until the chicken is cooked through and the potatoes are tender.
8. Remove from heat and let it rest for a few minutes before serving.
