Ingredients
- 8 lamb chops
- 1 cup fresh mint leaves
- 1/2 cup toasted pine nuts
- 2 cloves garlic
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- Salt and pepper to taste
Instructions
1. Preheat Green Egg to high heat.
2. Season lamb chops with salt and pepper.
3. Grill lamb chops for 3-4 minutes per side for medium-rare.
4. In a food processor, combine mint leaves, pine nuts, garlic, Parmesan, and olive oil. Blend until smooth.
5. Serve grilled lamb chops with mint pesto on top.
